My typical salad was comprised of iceberg lettuce and cherry
tomatoes smothered in a rich creamy salad dressing, and most
of my fruit came out of a tin can. When prepackaged meals
entered the grocery stores, I indulged in a variety of
processed foods, not to mention the frequent meals consumed at
fast-food restaurants. Does this diet sound familiar?
I was not
embarrassed to be called “junk-food Jodi”; thanks to my high
metabolism, I looked completely healthy and fit my entire
life. What I didn’t know was that eating all those foods
contributed to my autoimmune diseases (lupus and fibromyalgia).
Despite my outside appearance, my body was slowly attacking
itself and thoroughly confusing my immune system, due to
nutritional deficiencies. However, based on my dietary and
lifestyle changes, I was able to completely restore my health.
